Opening of San Mamés Jatetxea

The restaurant of the stadium, commanded by the chef Fernando Canales, is inaugurated after the reopening of the last month

The new San Mamés Jatetxea restaurant, inside the red-and-white stadium, has been officially inaugurated this morning in the presence of the president of Athletic Club, Aitor Elizegi, who accompanied the chef Fernando Canales, gastronomic director of a restaurant that already reopened its doors last October. Winner of a Michelin Star and two Repsol Suns thanks to El Atelier de Etxanobe restaurant. Canales has more than 30 years’ experience cooking and a brilliant career in both creativity and management of gastronomic projects. “San Mamés is the most gastronomic stadium in the world,” said the chef.

The project is managed by Sodexo Sports & Leisure, internationally recognised for the management of such emblematic places as the Eiffel Tower restaurants, the Prado Museum and The National Gallery in London. Its CEO, Franck Chanevas said he was “very proud to extend our collaboration with the Athletic Club. This project is a new opportunity to demonstrate our ability to create unique culinary experiences in iconic locations.”

This new promotion allows Athletic Club to increase business development in the stadium, in addition to continuing positioning San Mamés as a sports facility with a unique gastronomic approach and an international reference, which turns the stadium into the ‘Gune Gastronomiko de Bizkaia’, in a world as different but as visible as football.

The restaurant will be open every day at noon, except Mondays. On Thursdays, Fridays and Saturdays there will be dinner service.  Reservations are already open through the website of the restaurant www.sanmamesjatetxea.com or through the telephone number 94 439 51 38.

For the new restaurant of the stadium of Athletic Club, Fernando Canales has designed an attractive proposal based on the Biscayan cuisine, elaborated and with high quality, where the products and the flavors are the main supports.

The menu of San Mames Jatetxea includes successful dishes with a local identity. In the ‘To share’ section, proposals such as grilled anchovies, a technique consolidated by the chef in La Despensa de Etxanobe, chorizo croquettes or Euskaltxerri foie-gras, made of a breed of pig native to the Basque Country. In the ‘Starters’ section, the successful chilled garlic and almond soup stands out, a dish make for more than 20 years and which is added to the San Mamés menu, as well as the squid cannelloni and the monkfish soup. In ‘Mains’ section you could not miss out the cod, grilled or pilpil, and the fried hake in ‘Fernando’s style’. In the ‘Desserts’ section, are to highlight the cheesecake and the passion fruit gratin.

Monthly cooking courses

Another new feature of the restaurant is the showcooking area where cooking courses will be offered every month under the theme of ‘Learning to cook Basque dishes’. With a price of 55 euros that includes four hours of course and dinner, has two open dates to register now through the website of the restaurant: November 21 and December 12.

The course on 21 November will be ‘Cooking for friends’ and the recipes for those enrolled are guacamole and sea bass ceviche, hake stuffed with crayfish and white chocolate and cardamom mousse.

The course on 12 December will be dedicated to ‘Christmas Cooking’ with dishes such as truffled chicken terrine, thistles and monkfish in shrimps’ sauce and nougat flan.

All courses will be accompanied by a wine pairing chosen by the restaurant sommelier.

Team of Athletic chefs, 11 Michelin Stars

In addition, the San Mamés VIP Area service is offered on match days by Michelin-starred Biscayan chefs. This team is made up of 7 chefs, including Fernando Canales, who total 11 Michelin Stars.

The chefs on the staff of this unique team are Eneko Atxa (Azurmendi, ***), Josean Alija (Nerua, *), Daniel García (Zortziko, *), Ander Unda (Boroa, *), Sergio Zarate (Zarate, *), Zuriñe García (Andra Mari, *).

A very special project with which Athletic Club aims to contribute its grain of sand to the recognition of Biscayan cuisine through a world as different as football. And in parallel, to position San Mamés as a sports venue with a gastronomic approach of international reference.
